Jambalaya

Smoked Sausage fully cooked 2 cups chopped 

¾ lb. thawed, deveined Medium Shrimp uncooked, peeled, 

1 large onion                   1 medium green bell pepper

2 medium stalks celery     3 cloves garlic, finely chopped

1 tbsp parsley flakes        ½ tsp dried thyme leaves

½ tsp salt                        ¼ tsp pepper

¼ tsp red pepper sauce   4 cups hot cooked rice

 28 oz. can diced tomatoes, undrained

 

Mix all ingredients except shrimp and rice in crock pot.  Cover and cook on low for 7-8 hours (high 3-4 hours).  Stir in shrimp.  Cover and cook on low about 1 hour or until shrimp are pink and firm.  Serve jambalaya with rice.
