Meat Loaf Potato Crusted Mini Size

1 ½ lbs. Miller's Choice Lean Ground Beef

½ cup shredded Cheddar cheese

1/3 cup seasoned dry breadcrumbs

¼ cup bottled steak sauce

1 Tbsp. dried minced onion

½ tsp. dried thyme

½ tsp. salt      1 egg

1 ½ cups instant mashed potato mix

4 Tbsp. butter, melted

1 Tbsp. chopped fresh parsley

In a bowl, combine first 8 ingredients.

 Shape into 6 (4”x2 ½ “) loaves.

In separate bowl combine 1 ¾  cups water, potato mix, 2 Tbsp. butter and parsley. Press mixture onto tops and sides of loaves; place in large roasting pan. These can be made and refrigerated up to 1 day. Preheat oven to 350º. Bake until internal temp. 160º or approx. 40-45 minutes.
