Scallops en Casserole

1 ½ lbs. Bay Scallops

ground white pepper

dash cayenne

1 ½ cups fine fresh bread crumbs

2 eggs

4 Tbsp. water

½ tsp. salt

¼ cup melted butter

Mix salt, pepper, cayenne and bread crumbs together thoroughly. Beat eggs and water together. Dip scallops in egg mixture and roll in crumbs to coat well. Place flat and tightly together in a shallow casserole. Refrigerate ½ hour or until coating is firm. Pour melted butter over scallops so that they are all covered. Place in preheated oven ( 450º) and bake 25 to 30 minutes or until scallops are crisp. Serve with tartar sauce. Serves 4.
