Chilled Zucchini Soup


2 Tbsp butter

1 medium onion finely chopped

Pinch of curry powder

Pinch of basil

4 cups uncooked thinly sliced succhini

5 cups chicken broth

1/2 cup cream (optional) -[dieting?-add 1/2 cup 1%]

Directions: Saute' onions in the butter. Stir in curry and basil. Add zucchini and broth. Bring to boil. Reduce heat, cover, simmer 15 minutes or until very smooth. Stir in cream, if desired. Salt and pepper to taste. Refrigerate until chilled. Can be frosen for later use.
