Gourmet Golden Butternut Squash


3 lb. butternut squash 

1 cup dairy sour cream 

2 Tbsp. butter

1 medium onion, finely chopped

1 tsp. salt

1/4 tsp. pepper


Directions: Cut squash into several pieces; remove seed and fibers. Pare squash and cut into cubes. Heat 1 inch salted water to boiling. Add squash. Cover and heat to boiling. Cook until tender,15-20 minutes; drain. Mash squash; stir in remaining ingredients. Turn mixture into ungreased 1 quart casserole. cook uncovered in 400º oven until hot, 20-30 minutes.
